गाजर का पानी ( fermented drink of carrots)

The season of orange carrots is here. Most Indian households make halwa and pickle out of carrots, but one drink is very popular in northern India especially in the state of Uttar Pradesh, which is gajar ka pani (fermented drink of carrots).
The drink is generally taken after lunch traditionally. It is very easy to prepare, good for digestion and tasty as well.


Recipe:
Take two carrots, peel them and cut them into long thin pieces. Take one tablespoon of grinded yellow mustard seeds, a pinch of turmeric powder and salt as per taste.
Take a big glass container or a jug, fill it with water, add carrot pieces, and all other things. Cover the container’s mouth with a cotton cloth, then keep this under sunlight for three days. In the period of three days, mustard and salt present in the solution ferment the carrots. Carrots became sour in taste and the water also becomes sour and pungent in taste. 
Use the drink within one or two days otherwise it spoils and becomes harmful.
Don’t take more than one glass a day.

Pregnant women should avoid this drink.
